Ingredients
½ head romaine lettuce, chopped
1 avocado, cubed
2 cucumbers, cubed
½ yellow bell pepper, chopped
½ green bell pepper, chopped
½ red bell pepper, chopped
1 stem basil, chopped
Handful of parsley, chopped
Handful of black olives
Handful of feta cheese
Dressing
3 tbsp olive oil
1 tbsp mustard
Juice of 1 lemon
1 tsp chili flakes
Salt and black pepper to taste
Directions
Wash and chop the romaine lettuce and place it in a large bowl.
Add the avocado, cucumbers, bell peppers, basil, parsley, and black olives.
In a small jar or bowl, whisk together the olive oil, mustard, lemon juice, chili flakes, salt, and black pepper.
Pour the dressing over the salad and toss until evenly coated.
Sprinkle with feta cheese and serve immediately.
