This easy summer salad recipe is packed with crunchy cucumbers, fresh parsley, garlic, onion, and spicy green chilli, all mixed with creamy Greek yogurt and fresh lemon juice.

Ingredients:

  • 4 cucumbers

  • 1 white onion

  • 1 green chilli

  • 2 garlic cloves

  • Fresh parsley

  • 3 tbsp Greek yogurt

  • Sea salt

  • Black pepper

  • Juice of 1/2 lemon


Instructions:

  1. Slice the cucumbers and white onion into thin pieces and place into a large bowl.

  2. Add chopped green chilli, minced garlic, and freshly chopped parsley.

  3. Add Greek yogurt, sea salt, black pepper, and fresh lemon juice.

  4. Mix everything together until creamy and well combined.
